Welcome to the new episode of the Honey Secrets. This is Mark Leong here, your Asia’s Juice Guru.

And I’m Terry from GTCL.
Mark Leong:
Yes. And we are out now in the garden, today. And of course, we’re going to share with you, one of the amazing secrets in this episode again, about honey.
Mark Leong:
So Terry, you know I’m a big fan of honey, right? I used to buy a lot of honey, whether it’s raw, un-raw, Manuka, and all sorts of big range, different range of honeys. One thing I realized is that the honeys that I bought, regardless of the origin, et cetera, they all have different flavors in it. Some are sweet, some are sour, some, in fact, are bitter. What is the difference that causes all this honey to taste differently?
Terry Tong:
Right. There’s actually many factors as to why the honey looks different, or tastes different. The main reason is because of the nectar source, from different flowers and fruits.
Terry Tong:
So, different nectar sources, you get different colors of honey, some can be darker, some can be lighter. But generally you want a honey that is a darker in color, because it has proven to be higher in enzymes.
Terry Tong:
Again, different nectars, for example from coconut or tamarind, the nectars will be more sour, compared to other nectars, like Manuka or Acacia.
Mark Leong:
I see. So definitely, honey is not just supposed to taste sweet, but it should be a raw, different form of flavors, because they are coming from different nectars.
Terry Tong:
Yes.
Mark Leong:
